Ingredients:
- 8 cups baby spinach washed, stemmed and spun dried.
- 1/4 pounds sea scallops.
- 1 large apple cored and chopped.
- 2 tablespoons olive oil.
- 1 tablespoon water.
- 2 tablespoons slivered almonds, toasted
- Freshly ground black pepper.
- 1 teaspoon Dijon mustard.
- 2 tablespoons fresh lemon juice.
Directions:
1. Preheat the broiler pan to 350 degrees Fahrenheit .
2. Coat the broiler pan lightly with cooking spray.
3. Rinse the scallops thoroughly, and pat dry with paper towels.
4. Arrange the scallops on the broiler pan and coat lightly with cooking spray.
5. Broil for about 5 to 7 minutes turning occasionally, until when opaque throughout.
6. In a small bowl put the water, olive oil, mustard and lemon juice and mix well.
7. In a large bowl, place the spinach and then add the almonds and apples.
8. Toss with the dressing (mixture of oil and mustard) and season with pepper.
9. Divide between 4 plates and top with scallops.
10. Serve immediately

Grilled Chicken With Lemon
Ingredients:
- 1teaspoon dried parsley.
- 1/3 cup lemon juice.
- 4 small chicken breasts.
- 1/4 cup of water
- 1/4 teaspoon onion powder.
- 1/2 teaspoon garlic powder.
- 1/4 teaspoon salt.
Directions for cooking:
1. In a large bowl, put all the ingredients except chicken and mix them well.
2. In another bowl, put the chicken and then pour the mixture on top of the chicken breast.
3. Put the chicken breasts in the refrigerator for about 2 hours so that they can absorb the mixture.
4. Using a charcoal grill, cook the chicken on medium heat, turning them frequently.
5. Pour or brush on some of the marinade occasionally until the chicken breasts are completely cooked.
6. Place the remaining marinade in a saucepan and heat.
7. Serve when hot.
Yields: 4 servings.
Baked Snapper Fillet With Ginger And Spring Onions.
Ingredients:
- 2 spring onions, finely chopped.
- 4 pieces of snapper.
- 1 tablespoon reduced salt soy sauce.
- 1 teaspoon sesame oil.
- 1 tablespoon grated fresh ginger.
- A dash of pepper.
Direction:
1. Preheat the oven to 350 degrees Fahrenheit.
2. Prepare a metal baking dish by lining with aluminum foil and spraying the foil with cooking oil.
3. Place the fish on the foil in one layer.
4. In a small bowl, put the spring onion, sesame oil, soy sauce and ginger and mix well.
5. Pour the mixture on top of the fish and fold the foil over to seal in the fillets.
6. Bake for 8 to 12 minutes.
7. Serve immediately when still hot.

ingredients:
- 2 large cucumbers peeled and sliced.
- 4 thinly sliced scallions

- 1/4 cup reduced fat sour cream.
- 1/2 cup small green bell pepper, chopped finely.
- 3 cups ice water.
- 1/8 teaspoon freshly ground black pepper.
Directions:
1. In a bowl, put the cucumbers, salt and ice water and mix well.
2. Cover and chill for 45minutes in the fridge and then drain and return the cucumbers to the bowl.

Ingredients:
- 3/4 cup instant brown rice.
- 3/4 cup sliced scallions.
- 1 and 1/2 cups frozen peas.
- 1/4 cup fresh mint, sliced.
- 1/4 cup feta cheese, finely crumbled.
- 1 and 1/4 cups reduced sodium chicken broth.
- Freshly ground pepper.
Directions:
1. In a large saucepan, boil the chicken broth over high heat.
2. Add rice and bring to simmer, cover and reduce heat to medium-low and cook for 4 minutes.
3. Stir in peas and return to simmer over high heat.
4. Cover and reduce heat to medium-low and continue to cook until the rice has absorbed most of the liquid – about 6 minutes.
5. Remove from heat and stir in the mint, feta, scallions and pepper.
6. Cover and set aside for about 5 minutes or until the liquid is absorbed.
7. Serve while still hot.
Yields: 4 servings of around 3/4 cup each.
